Fresh Summer Salsa

1 bunch cilantro
1 orange bell pepper
1 red bell pepper
1 small purple onion
3 cups grape tomatoes
2 yellow vine tomatoes
1/4 c. green onion
1 lime

Dice all veggies small and quarter or half the grape tomatoes. Toss all together in a mixing bowl with the juice and zest of lime, and plenty of salt and pepper to taste. Adore!

Mini Cucumber Bites

1 English cucumber
1/2 c. homemade hummus
1/3 c. fresh sprouts
3-4 Red radishes
1-2 scallions

Thinly slice cucumber, radishes and green onions. Then layer ingredients on top of cucumber slice: a dollop of hummus, then sprouts, radish, and green onions. Season with salt and pepper, garnish with hemp seeds, lemon slice and parsley.

Homemade Sauerkraut

1 head of red cabbage
1 T salt

Roughly chop cabbage, and working in batches, shred in food processor with salt. Stuff into canning cars, or any jar with a tight fitting lid. Let the cabbage sit for 7 days without opening.

Sauerkraut offers the health benefits offered by all cruciferous vegetables as well as the pro biotic advantages derived from the fermentation process. Cabbage is high in Vitamins A and C, has been known to lower cholesterol, and is also a rich source of phytonutrient antioxidants, and much more.
