Caramelized Onion Dressing

1 large sweet onion
3 cloves garlic
1 t. olive oil
1 T honey
6 deglet noor dates
6 T apple cider vinegar
1/4 c olive oil
1 T cashews
1 T dijon mustard
salt and pepper to taste

Slice the onions and place in a bowl with the garlic, and toss with the olive oil, honey and a little salt and pepper. You can either saute them or grill them (my favorite). If you're grilling just place onions and garlic on a piece of tin foil on grill rack, on high heat for 10-15 min - so easy. After the onions and garlic are caramelized, put all of your ingredients into a vita-mix or high powered blender and puree until smooth.

t. himalayan sea salt

You can either throw all ingredients into the food processor or vita-mix for a super creamy texture, or finely chop herbs and garlic, and whisk all ingredients together for more texture

This dressing especially pairs well with an Asian salad, or as a dip for an Asian wrap. Also tastes fabulous with anything even as simple as a chopped salad. Enjoy!

Roasted Tomato Dressing

1/2 lb. plum tomatoes
3-4 cloves garlic
t. agave nectar
3 T Olive Oil
1 t. Himalayan Sea Salt
1 t. black pepper
1/2 t. paprika
1/2 t. bee pollen powder
dash cayenne pepper
dash Turmeric Powder

1 T - 4 T water

Drizzle oil and agave nectar over plum tomatoes and garlic, and season with salt and pepper. Toss together and roast in oven on high heat until tomatoes are tender and juicy (about 450 degrees for 15-30 minutes). Let tomatoes and garlic cool to room temperature, then add all ingredients into a food processor or Vita-Mix.

If needed, gradually add water until you reach desired consistency. This recipe is very rich and savory, so a little water won't change the flavor much at all.

Goji Berry Vinaigrette with Poppy Seeds
