Simple Salad with Sweet Onion Dressing

1 handful spring mix
1 tomato - sliced
5-6 green olives
1/2 c. shredded purple cabbage
1 carrot - sliced into thin strips
1/4 c. sunflower seeds
Place spring mix on plate and top with green olives, tomatoes, purple cabbage and carrots. Sprinkle sunflower seeds on top with a drizzle of sweet onion dressing. This salad makes a great side or a fantastic mid-afternoon snack.

Clean Green Salad with Herb Vinaigrette

1 small handful baby kale
1 small handful spring mix or spinach
cucumber slices
1 stalk celery - sliced into 1/2" strips
1 green onion - sliced
1/4 c. fresh parsley
1/4 c. broccoli pieces
1/2 c. pumpkin seeds
sprinkle of poppy seeds
salt and pepper to taste
Slice and dice veggies however you like and layer onto plate. Season salad with salt and pepper and serve with the herb vinaigrette.

Not only is this salad tasty and refreshing, it packs a ton of protein, vitamins and minerals. Enjoy this salad for lunch or as a snack and it will help to hydrate your body and give you the energy you need to carry on with the rest of your day.

Raw Power Salad with Tahini Mustard Dressing

2 c. massaged Kale
1 c. torn Swiss chard
1 yellow tomato
1 orange tomato
1 roma tomato
1 t. chopped shallot
1/2 red bell pepper
1 c. quartered purple grapes
1 c. sprouted lentils
1/4 c. chopped walnuts
1/4 c. chopped pecans
t. sesame seeds
2 t. chopped cilantro
1 green onion - sliced
Literally massage the kale with your hands in a bowl of warm water and 1 t. salt for about a minute or two. Massaging kale turns it into a soft fluffy version of the rough and tough kale that most of us know. It also breaks it down and allows our bodies to absorb more of it's nutrients. Chop or tear the chard into small pieces. Toss greens together in a mixing bowl with desired amount of dressing. Dice all vegetables fairly small, and toss together in another bowl with desired amount of dressing. Layer chopped veggies on top of greens and garnish with nuts, cilantro, sesame seeds and green onion.
This salad makes a great lunch or dinner because It's filling and packed with enzymes, vitamins and minerals., and will leave you feeling satisfied and energized.

Raw Zucchini "Pasta" Salad

3 zucchinis - spiralized, sliced into thin strips, or shredded
1 handful red grapes - halved
1/4 c. red onion - chopped small
2 small tomatoes - sliced
1/2 c. kale - chopped small
1/2 c. broccoli - chopped
1 T hemp seeds
1/2 t. bee pollen powder
1/2 c. fresh parsley - chopped
1 1/2 c. raw "alfredo" sauce
Chop, dice and slice all of the ingredients and combine in a medium sized mixing bowl, toss with "alfredo" sauce. Garnish with hemp seeds, bee pollen powder and parsley.

This fresh "pasta" salad is truly sensational, and so closely resembles a real pasta salad without the bad fat and carbs. Keeping your body feeling clean and alive! Serves 2.

Chick-pea Salad

2 c. chick-peas (garbanzo beans)
3 c. kale - chopped small
1/2 c. tomatoes - diced
1/2 c. cucumber - diced
2 carrots - shredded
1 small shallot- diced
1 c. chopped parsley
T hemp seeds
pinch cayenne pepper
1 t. Himalayan Sea Salt
1/2 t. black pepper

Sunflower Creme
3/4 c. sunnies - soaked 5-8 hours
1 lemon - juice and zest
1 lime- juiced
T tahini
1/2 t. Himalayan sea salt
To make Sunflower Creme- soak sunflower seeds, drain and add all ingredients to vita-mix or high powered blender. Puree until smooth and creamy. It will have a thick consistency.

Next, combine cooked chick-peas, veggies, all seasonings, and sunflower creme in a large bowl and mix well. Season with salt and pepper. Serve on top of a few, pretty baby greens and garnish with cucumbers, almonds, and parsley.

This salad is exceptionally nutritious, and it an excellent source for antioxidant vitamins, minerals and is fiber-rich. This recipes serves 2.

Fresh Autumn Salad with Orange Vinaigrette

1 c. spinach leafs
2 brussel sprouts
1/4 yellow squash
1/2 orange bell pepper
1/2 c. pomegranate seeds
1/4 c. fresh garbanzo beans
t. chia seeds
T sunflower seeds
Slice vegetables and seed pomegranate, and garbanzo beans. Layer all ingredients onto plate and garnish with chia seeds and sunnies.

Nut and Berry Salad with Goji Berry Dressing

1/2 c. spinach
1/2 c. kale
1/2 c. mixed berries (goji, blueberry, raspberry, blackberry, etc.)
1/2 c. pecans and walnuts
5-10 cucumber slices
1 T parsley
Simply toss all ingredients together or arrange on a plate. This salad tastes light and clean and provides your body with a ton of antioxidants and heart healthy properties. The nuts add a nice crunch and are full of essential minerals. Plus, it's packed with enzymes so it will digest easy and keep your energy levels up!
